This soup makes me feel good – especially if I am under-the-weather and/or feeling the effects of a binge (be it Halloween candy, holiday treats or a night out). The versatility for this stock also makes me feel good – if I have some garlic I am set, everything else is extra. I have only included a few options here so feel free to get creative, e.g. left over potatoes & cheese & green onion = loaded garlic mashed potato soup.
If you are worried about garlic breath add a handful of fresh parsley to the soup at the end or just munch on some after you eat. If you aren’t worried about garlic breath, add some cheesy garlic croutons to this soup and/or add a dollop of avocado garlic aioli.
Important Note: To get the health benefits from garlic it needs to be crushed to release alliinase – an enzyme that makes the health promoting allicin. Research shows that for maximum benefit crushed garlic should sit for at least 10 minutes before cooking to allow time for the alliinase to work.
